Egg-cellent ways to start the day!

Breakfast IS the most important meal of the day! A tip to fight post-holiday syndrome is to create a positive outlook to your day. So set yourself up for a good day with these easy recipes! By having a healthy breakfast, this gives you energy to start the day, and is linked to many health benefits including weigh control and improved performance which will help keep the good holiday mood lingering.

Avocado Bacon & Eggs

  • 1 medium avocado
  • 2 eggs
  • 1 piece of cooked bacon, crumbled
  • 1 tablespoon of low-fat cheese
  • pinch of salt


  1. Preheat oven to 220 degrees C
  2. Cut the avocado in half and remove the pit
  3. With a spoon, scoop out some of the avocado so it’s bigger than your egg and yolk
  4. Place in a muffin pan to keep the avocado stable while cooking
  5. Crack your egg and add it to the inside of your avocado
  6. Sprinkle cheese on top with a pinch of salt
  7. Top with cooked bacon
  8. Cook for 14-16minutes



Breakfast Tacos

  • 1 tablespoon of oil
  • 1/2 white onion, diced
  • 200grams of chorizo
  • 4 large eggs
  • 2 tablespoons of milk
  • 1/2 capsicum (red & yellow), chopped
  • 2 tablespoons of coriander, finely chopped
  •  4-5 medium tortillas


  1. In a large pan, heat the oil over medium head and add in the onion
  2. Sautee for 1 minute and then add in the chorizo, cook until the chorizo is cooked all the way through
  3. In a bowl, whisk together your eggs and milk
  4. Lightly grease a medium sized pot and heat over a medium heat
  5. Add eggs and scramble for 1 minute
  6. Stir in the bell peppers and the cilantro and continue to cook for an addition minute or until the eggs are scrambled to your liking
  7. Assemble the tacos by filling each tortilla with chorizo and the scrambled egg mixture
  8. Top with avocado, salsa and any other fillings that you’d prefer

Avocado Toast with Egg

  • 1 slice of whole grain bread, toasted
  • 1/4 mashed avocado
  • cooking spray
  • 1 large egg
  • salt & pepper to taste


  1. Mash the avocado in a small bowl and season with salt and pepper
  2. Heat a small nonstick pan over low heat, spray with oil and gently crack the egg. Cover and cook to your liking
  3. Place mash avocado over toast, top with egg, salt and pepper

Bacon and Egg Muffinspi

  • 12 slices of bacon
  • 6 eggs
  • 3 slices of bread
  • 1/2 cup sautéed mushroom
  • salt & pepper
  • thyme, oregano or parsley (optional)


  1. Spray 6-count muffin pan
  2. Partially cook the bacon, render the fat and drain on paper towels and cool slightly
  3. Using a cookie cutter or a glass, cut circles roughly the size of the base of the muffin cup
  4. Drain all but 1 tbs of the bacon fat out of the frying pan
  5. Saute mushrooms for about 5minutes over medium heat
  6. Preheat oven to 200 degrees C
  7. Place a bread circle at the bottom of each muffin cup
  8. Fit 2 slices of bacon loosely around the sides of each cup, lining the sides of the muffin cup
  9. place about 1 tbs of the mushroom on the top of the bread circle
  10. Break the egg and add to the bacon-lined cup on top of the mushrooms
  11. Sprinkle top of each egg with salt, pepper, and herbs
  12. Bake at 200 degrees C for 15-20minutes
